Thanks to Pam's family connection, we were lucky enough to be able to help out with this year's olive harvest. Most of the olives had been harvested and milled by the time we landed in early November but a few trees were saved especially for us.
We harvested the olives and drove them to the mill where we were able to watch the whole process.
While the olives were being processed we drank a glass of zivania, the famous Cyprus spirit that takes your breath away and turns your insides out, to celebrate the new season's olive oil. Yiamas (cheers)!
When that rich, golden, olive oil began flowing at the end of the process, we were presented with hot toast which we drizzled with the freshly-pressed olive oil and sprinkled with oregano and sea salt.
