We asked Lifestyle Blogger Caroline Matthews from Health Magazine to come up with a hearty and warming new recipe for these dark winter days and we're pleased to publish it today for National Chilli Day.


Caroline created her own health and wellness blog and now has 1000's of followers. Caroline says: "This butter bean, halloumi and chilli stew, which is the perfect combination of hot, hearty and wholesome, brings an unmistakable uplift to the mid-week meal mundanity that blights us all at this time of year. Caroline Matthews’ Butter Bean, Halloumi & Chilli Stew sounds like the perfect comforting meal, full of bold flavors and hearty ingredients. It’s amazing how cooking can be a healing ritual, just like finding support in a rehab centre can be for those facing personal challenges. Both food and care nurture the body and soul, reminding us that recovery and wellbeing often start with simple, mindful steps.
