RECIPE: GREEK CHICKPEA BREADSTICKS

Chef's notes: "I'm always looking to make homemade crackers and breadsticks to avoid store bought UPF snacks — though I'll be honest, I haven't completely banished them because sometimes you just need the easy way in life! My Greek Chickpea Breadsticks recipe evolved from that same idea — naturally vegan, gluten free and packed with protein thanks to the chickpeas and chickpea flour. OliveOlive's Greek seasonings and extra virgin olive oil make them something really special!"
INGREDIENTS
¾ cup drained chickpeas (save the chickpea water!)
¼ cup chickpea water (aquafaba)
1 tsp OliveOlive Greek Seasoning Blend for Greek Salad
4 jumbo pitted green olives (increase, decrease or skip to taste)
Chilli flakes to taste
Salt and black pepper to taste
¼ cup chickpea flour
¼ cup rice flour (plus extra for dusting)
METHOD
Drain your chickpeas and set aside the chickpea water — don't throw it away, it's liquid gold for baking!
Add the drained chickpeas, chickpea water, OliveOlive extra virgin olive oil, Greek Seasoning Blend for Greek Salad, green olives, chilli flakes, salt and black pepper to a blender. Blend to a smooth paste, scraping down the sides with a spatula as needed. If the mixture is too thick, add 1-2 extra teaspoons of chickpea water.
Transfer the paste to a bowl and add the chickpea flour and rice flour. Knead everything together into a soft, non sticky dough. Don't worry — it will be soft, not tight!
Leave the dough to rest for 5 minutes.
Dust a sheet of baking paper or chopping board with rice flour. Take a spoonful of dough and roll into a breadstick shape using your fingertips. Place on a lined baking tray. Repeat with remaining dough.
Air fryer: Air fry at 200°C for 25 minutes, then reduce to 180°C for a further 20 minutes. Once they start feeling stiff, keep a close eye and add 5 minutes at a time as needed.
Oven: Bake at 200°C for 25 minutes, then reduce to 180°C for a further 20 minutes. Check halfway and add 5 minutes at a time until stiff and golden.
Once done, transfer to a cooling rack and leave to cool completely — they will crisp up further as they cool!
Serve with a dip of your choice or enjoy on their own. Perfect for lunchboxes, picnics, a snack with your tea or even on the go!
