QUICK GREEK SALAD WITH FETA

Classic Greek salad in a bowl on a kitchen table. Inside the bowl are chunks of tomato, cucumber, feta cheese, slices of onions, peppers, olives and everything is liberally covered in Greek herbs and extra virgin olive oil.

SERVES 4 | PREPARATION TIME: 10 MINUTES


This recipe is for a classic Greek Salad, but you can add anything you like really - eggs, potatoes, capers, rocket, radish etc. Or swap the feta for chunks of traditional halloumi cheese (not the squeaky supermarket version!).


INGREDIENTS


4 medium tomatoes

1 cucumber

1 green bell pepper, cored

1 medium red onion

Greek Pitted Kalamata Olives

Salt, a pinch

1-2 tbsp red wine vinegar

8 oz or more creamy Greek feta cheese in blocks

1 tbsp of OliveOlive Greek Seasoning Blend for Greek Salad


METHOD 


Cut the tomatoes into wedges or large chunks. Cut the partially peeled cucumber in half length-wise, then slice into thick halves. Thinly slice the bell pepper into rings and cut the red onion in half and thinly slice into half-moons.


Then, place everything in a large salad dish and add a good handful of the pitted kalamata olives, season very lightly with salt (just a pinch).


Pour in the olive oil and red wine vinegar. Give everything a very gentle toss to mix; be careful not to over mix - this salad is not meant to be handled too much - and add the feta blocks on top. Finally, sprinkle the Greek Seasoning Blend for Greek salad.
