SERVES 4 | PREPARATION TIME: 10-15 MINUTES
Depending on personal preference, Cypriot salads are dressed with a vinegar- or lemon-based dressing. My dad makes his own red wine vinegar, so we always use that. This is the basic recipe, but you can add halloumi, olives, feta, capers, rocket, radish... anything you like!
INGREDIENTS
6 lettuce leaves (romaine or cos lettuce works best)
2 medium tomatoes
½ a cucumber
For the red wine vinegar dressing
1 tbsp red wine vinegar
Sea salt and black pepper
METHOD
Arrange the lettuce, tomatoes and cucumber, chopped how you like them, on a plate.
For the red wine vinegar dressing
Put all ingredients into a jar, place the lid on and shake. Taste and season to your liking. The measures here are approximate; we usually just pour and taste as we go along!
Drizzle the dressing over the salad and serve.
