RECIPE: PEA, AVOCADO & MINT DIP WITH GREEK SEASONING

Chef's notes: "This dip was born out of a mum moment — I made it to jazz up my daughter's lunchbox and she loved it so much she started asking for it by name! Use it as a dip, a sandwich spread or stirred through pasta. Finished with OliveOlive extra virgin olive oil and Greek Seasoning Blend for salad, it goes from simple to something really special!"


INGREDIENTS

1 avocado

120g (1 cup) blanched peas

Handful of fresh mint leaves

2 small cloves of garlic

Zest and juice of 1 lime

Salt and black pepper to taste


For added texture:

Handful of plum tomatoes, chopped


Optional toppings:

Chopped olives

Crumbled feta

Grated halloumi


METHOD

  1. Add the avocado, blanched peas, fresh mint, garlic, lime zest and juice, OliveOlive extra virgin olive oil, Greek Seasoning Blend for Salad, salt and black pepper to a blender.

  2. Blend coarsely — you want some texture, not a completely smooth paste!

  3. Transfer to a serving bowl and fold in the chopped plum tomatoes for added texture.

  4. Top with chopped olives and crumbled feta or halloumi if using.

  5. Drizzle with a little extra OliveOlive extra virgin olive oil to finish. Serve with pitta, crackers, or use as a spread on sandwiches!
