HALLOUMI AND WATERMELON APPETISERS

MAKES 24 APPETISERS | PREPARATION TIME: 15 MINUTES


This is more a tip than a recipe, but for as long as I can remember my favourite summer breakfast and snack has been watermelon and halloumi. You can use this same combination to make some lovely, posh-looking appetisers on cocktail sticks with the addition of fresh mint. INGREDIENTS 1 watermelon

24 mint leaves

24 cocktail sticks METHOD You won’t need the whole watermelon, so cut off a piece and dice the flesh into 24 similar sized cubes. Cut the halloumi into 24 similar sized cubes and have the mint leaves handy.

To assemble the appetisers, stack up a cube of halloumi, a mint leaf in the middle and a watermelon cube on the top. Pierce this trio with a cocktail stick and repeat 23 more times!

This also works well with halved cherry or baby plum tomatoes and basil leaves.

Alternatively, simply put some watermelon chunks with a few slices or cubes of halloumi straight from the pack into a bowl for the easiest summer lunch or snack. Then you can mop up the sweet and salty juice with some bread or, like the five-year-old me, just drink it from the bowl!
