ZESTY HALLOUMI IN PITTA BREAD

This isn't your average halloumi cheese; it's a culinary star! Grilled to golden perfection, our halloumi develops a delightful slightly squeaky texture and a rich, savoury flavour. Paired with our peppery Extra Virgin Olive Oil, it’s simple yet utterly divine, and it's one of our go-to halloumi recipes.


INGREDIENTS


1 clove garlic, minced

1 tsp dried oregano

A pinch of pink peppercorns or red pepper flakes (optional, for a little heat!)

Freshly ground black pepper


For Serving:

Fresh mint or parsley, chopped

Lemon wedges

A side of pitta or crusty bread & a simple salad


METHOD 

Slice the halloumi into 1cm thick pieces.

In a small bowl, whisk together the olive oil, minced garlic, oregano, and pink peppercorns/red pepper flakes. Season with black pepper.

Heat a non-stick frying pan or griddle over medium-high heat. No oil needed for the pan itself!

Fry the halloumi slices for 2-3 minutes per side, until beautifully golden brown and slightly softened. Don't overcrowd the pan!

Arrange the grilled halloumi on a serving plate. Drizzle generously with the garlic-olive oil mixture. Scatter with fresh mint or parsley.
