RECIPE: GREEK TWIST BAGELS WITH SUN DRIED TOMATOES & HALLOUMI

Chef's notes: "I regularly make two ingredient bagels for my daughter's lunchbox — usually with cheddar and jalapeño. But when I was thinking of ways to showcase OliveOlive's Greek spice blends, I gave them a Greek twist by swapping in sun dried tomatoes and halloumi. The aroma that fills your kitchen when these are baking is absolutely insane — and they disappeared just as fast as the original version! Slice, butter and devour!"
INGREDIENTS
30g plain flour
90g bread flour
40g whole wheat flour
1½ tsp baking powder
1 tsp OliveOlive Greek Seasoning Blend for Souvlaki
Salt to taste
40g sun dried tomatoes, finely chopped
40g Cyprus Village halloumi cheese, cut into very small pieces
180g thick Greek yogurt (plus 1 extra tbsp if needed)
METHOD
Preheat your oven to 200°C.
In a large bowl mix together the plain flour, bread flour, whole wheat flour, baking powder, salt and OliveOlive Greek Seasoning Blend for Souvlaki.
Add the chopped sun dried tomatoes and halloumi pieces. Mix well.
Add the Greek yogurt and bring everything together into a slightly sticky dough. If you can still see dry flour, add an extra tablespoon of yogurt and mix again.
Leave the dough to rest for 5 minutes.
Divide the dough into 4 equal portions. Shape each into a ball and make a hole in the centre to form a bagel shape, or keep as a round roll if you prefer.
Place on a lined baking tray and bake at 200°C for 10 minutes, then reduce the heat to 180°C for a further 10 minutes until golden brown.
Transfer to a cooling rack and leave to cool before slicing.

Note: Instead of using three different flours you can simply use all bread flour or all plain flour — whatever you have in your cupboard!
Air fryer option: Air fry at 200°C for 10 minutes, then reduce to 180°C for a further 10 minutes. Keep an eye on them once they start turning golden!
