RECIPE: HALLOUMI, OLIVE & SWEET DROP PEPPER SKEWERS WITH GREEK SEASONING

Chef's notes: "This recipe takes me straight back to my childhood in India where my aunty made the simplest skewers with tinned cherries, pineapple and paneer for every party. I've given them a grown up Greek twist with OliveOlive's Souvlaki seasoning and extra virgin olive oil. Mami, this one's for you!"
INGREDIENTS
½ block of Cyprus Village halloumi cheese, cut into chunks
12 jumbo olives, drained
12 sweet drop peppers, drained
2 pinches of OliveOlive Greek Seasoning Blend for Souvlaki
12 cocktail sticks
METHOD
Cut the halloumi into chunks and place in a bowl.
Drizzle with OliveOlive extra virgin olive oil, sprinkle with Greek Seasoning Blend for Souvlaki and toss well. Leave to marinate while you drain your olives and sweet drop peppers.
To assemble, take a cocktail stick and thread on one jumbo olive, followed by a chunk of halloumi, and finish with a sweet drop pepper at the tip.
Arrange on a serving platter and sprinkle with a little extra Greek Seasoning Blend for Souvlaki if you like.
