GREEK MARINATED CHICKEN

SERVES 4 | PREPARATION TIME: 15 MINUTES | COOKING TIME: 20 MINUTES


This is a very tasty but simple chicken dish that you can either cook under a grill or on the BBQ. There are two ways to prepare it – either with simple dried oregano or with our very own Greek Seasoning Blend for Chicken that’s got a bit more of a kick, with chilli and mustard as well as oregano.


INGREDIENTS


4 large skinless chicken breasts

100g plain Greek yoghurt

Juice of 2 lemons

Zest of 1 lemon

4-5 cloves minced garlic

1 tsp salt

½ freshly ground black pepper



METHOD


In a bowl mix together the Greek yogurt, extra virgin olive oil, the lemon juice, lemon zest, minced garlic, Greek Seasoning for Chicken, salt and pepper.


Separate the mixture into two bowls – one with two thirds of the mixture for the marinade, and the other for basting during cooking.


Place the chicken pieces in the marinating bowl and make sure they are well covered by the marinade. Put this in the fridge ideally overnight, but at least for a couple of hours to really get the flavour going.


If you are grilling the chicken, lightly oil the grate and set the temperature to medium high. If you are barbequing, then lightly oil the barbeque grill and ensure the coals are hot but not flaming.


Grill the chicken for around 15-20 minutes, basting it throughout with the remaining marinade mixture and turning occasionally to ensure that both sides are a light brown and the juices run clear.


Serve the chicken warm, either with Greek-style potatoes, a Greek Salad or rice and be sure to enjoy a delicious dollop of tzatziki on the side as well.
